Classic Meals Made Vegan: Spaghetti & Meatballs

Once you decide to make positive changes in your life there will always be something trying to bring you back to your old lifestyle. Food cravings can get intense. What do you do when you have a craving, but it’s outside your diet? Well, you make the healthiest version you possibly can! Pro tip: don’t compare your vegan flavors to meat flavors! Relax, keep an open mind and tap into your inner world-renowned chef.

Here’s what you’ll need:

2 jars of your favorite tomato-based pasta sauce

2-3 packs of meatless meatballs

3-4 tablespoons of olive oil

1 tablespoon of garlic powder

1 tablespoon of onion powder

1 tablespoon of sriracha

1 teaspoon of red pepper flakes (optional)

1 tablespoon of sugar (optional)


Here’s how it’s done:

Step 1:

Cut your onions into slices that suit your preference.

Step 2:

Grab a large pot as this will yield enough dinner/lunch for a week. Coat the bottom of the pan with olive oil and put the fire on medium heat.

Step 3:

Once the oil is hot, add the sliced onions to the pan. Cook for about 5 minutes, until the onions are soft but not at all browned.

Step 4:

Add in the meatballs and cook until browned on both sides. This brings out some of the flavor of the “meatballs”, and ultimately make your sauce more flavorful. If the onions are browning too fast with the meatballs that’s okay–you can add the sauce when your comfortable with the brown-ness of both the onions and the meatballs.

Step 5:

Add your sauce and all of the seasonings. Bring the sauce to a boil and allow to simmer for 10-20 minutes, depending on how frozen the meatballs were before putting them in the pan.

You should have plenty of food for lunch all week, and even some to eat again at dinner time!
